Flavio al Velavevodetto in Testaccio is world-class for Carbonara! Also try Da Enzo al 29 in Trastevere (arrive 20 mins before opening to get a table).

If you want to avoid tourist traps, definitely lean more toward Testaccio than Trastevere! While Trastevere is lovely for a walk, many spots there have succumbed to tourist menus. In Testaccio, **Flavio al Velavevodetto** is my absolute go-to for Carbonara—the rigatoni is perfectly al dente and the guanciale is cooked to perfection. Expect to pay around €11–€13 for a pasta main. Right down the street, **Felice a Testaccio** does a legendary Cacio e Pepe that they cream together right at your table (around €14). If you're set on Trastevere, **Da Enzo al 29** is worth the hype, but you must get there 20–30 minutes before they open at 19:30 to queue, as they don't take dinner reservations for small groups. Their Cacio e Pepe is about €12 and totally spot on. Quick rule of thumb for Rome: if a place opens for dinner before 19:30, has photos on the menu, or has a host outside inviting you in, keep walking!
